The Silvester's story

Silvester's is a multi-award-winning, spectacularly designed restaurant. It features a medley of intimate and grand open space with front row seats to an open kitchen, offering an immersive dining experience. The creative, exquisite contemporary-Australian cuisine is an intriguing showcase and fusion of global flavours by Michelin Star-trained French chef, Raphael Szurek, trained under celebrity Lyonnais chef Paul Bocuse himself.

The menu showcases locally and ethically sourced all-Australian fresh produce with an unexpected blend of flavours. The food is complemented by a vast selection of over 100 premium Australian and international wines.

HISTORY

Silvester's unique story is inspired by the rich history of this very space. In decades gone by, one of Sydney's finest butchers and providores, the Silvester Brothers, served up local cuts from within these walls. Today, we honour their commitment to fresh food by sourcing quality ingredients brought to the table as dishes that capture our own.
